Here is a list of resources I have found helpful for the Ruby language (not including Rails in this post):

http://www.rubygarden.org/ - Ruby Garden, a wonderful Wiki and blog about Ruby with lots of great resources and links
http://dmoz.org/Computers/Programming/Languages/Ruby/ - The Open Directory category for Ruby, with a wonderful amount of information
http://www.pragmaticprogrammer.com/titles/ruby/index.html - The Pragmatic Programmer's Guide to Ruby, a great book on Ruby, with an online edition as well
http://www.rubycentral.org/ - Ruby Central backs Ruby financially, but this site also contains some useful information
http://www.rubycookbook.org/ - The Ruby Cookbook, this site was having some technical difficulties when I went to it, but it looks like a fairly informative site
http://www.rubygarden.org/ruby?RubyUserGroups - A section on Ruby User Groups on Ruby Garden, find a local group in your area!
http://ruby.brian-schroeder.de/ - A Ruby a Day, a blog site dedicated to Ruby
http://www.rubycentral.com/ - Ruby Central contains several helpful books and tutorials, and a one-click Windows installer

http://poignantguide.net/ruby/ - A lighthearted but very useful guide on Ruby, and why you should use it! Written so that even a non-programmer can get started with Ruby.

I've got a site (well forums actually)
Ruby R Us (http://s14.invisionfree.com/Ruby_R_US/)
It mostly pertains to ruby. but for each language that anyone on it becomes familiar with, we add a new section. so far we only have ruby and visual basic (which the express edition is free until November 7'th 2006).
if you dont know visual basic I'm writing a tutorial for VB Express edition.

And as another note. If you know any programing language really well we would like to have ya. (and possibly write a beginners tutorial, by your choice only.)

also we have stuff pertaining to game making engines.
and if you would like to have another one added post in the suggestions catagory.

P.S. I'm slowly but surly working on the site (making it more custom)

There's http://tryruby.hobix.com, also by _why, which has an interactive tutorial.
